And the best part…they are BAKED!! Not fried! (Do I sound like a commercial??) I think that’s the best part ever. None of the grease to deal with, but still full of crispy crunch and delicious flavor. Oh my these are WONDERFUL!! I found this recipe here. She has a basketfull of delicious recipes to try. Everyone I’ve tried has been amazing. 😀
Here’s how you whip up these bad boys:
* 1 medium onion, sliced into 1/4 inch rings
*2 1/4 cups low-fat buttermilk
1/2 cup panko bread crumbs (Panko is magic! Makes these babies crisp right up. :D)
*1/4 cup Italian seasoned whole wheat bread crumbs
*1/4 cup crushed corn flake crumbs
*salt to taste
*olive oil baking spray
*Place slices of onion in a shallow dish
*Pour the buttermilk over the top of the onions and let them soak for about 1-2 hours, refrigerated
When you’re read to make them:
*pre-heat oven to 450*
*line baking sheet with parchment paper
*Combine panko, bread crumbs and corn flakes in a large dish, season with salt
*Dip each soakedonion ring into the crumb mixture, coating well.
*place rings onto two cookie sheets, spreading out
*Lightly spray with oil
*bake about 10-12 minutes or until golden brown
Something I noticed when making these..
*The crumb mixture gets really sticky and soggy over time, so I divided it up. After I mixed up the crumb mixture, I’d only put some of it into a bowl and dip the onion rings in there. Then, once the mixture got hard to work with, I tossed it and started with fresh crumb mixture. (you’ll know when to switch because it won’t stick to the onions any more)
*Also, using tongs or a fork, works much better then using your fingers. The crumb mixture stays on the onions..not on your fingers. So if you have tongs, use them.
*When placing them on the baking sheet, give them room to breathe, spread them out. They will cook much better that way.
And that, my friends, is how you get crispy, delicious, onion rings without all the nasty greasy oil. (not that I’m opposed to walking the fine line from time to time..just not today. :D)
