Jumbo Tacos

This is one of our favorite meals around here. Hands down. The kids eat it, the hubby eats it, and I eat it. (But that part shouldn’t surprise you..)  These noodle-y, taco-y wonder is a hit when we have company over, orwhen I take them in to a friend.  You just can’t go wrong here.  We call them “Jumbo Tacos” because..well..they’re jumbo!! (and they have a jumbo sized taste. I know..hardy har har..)

*1 box ‘Jumbo’ seashell looking  noodles
*1 lb ground hamburger or turkey meat, cooked throughly, drained
*1 onion, diced
*1 can petite diced tomatoes, drained
*your favorite taco seasonings or packet to taste
*1 can spaghetti sauce
*shredded cheddar cheese (optional)
*chopped cilantro (optional)
*sliced olives (optional)
*sour cream (optional)

*Fill a large cooking pot 1/2 way with water.  Bring to a boil.  Add noodles, stirring gently and often.  When cooked, drain and set aside.

*In a large skillet, cook hambruger or ground turkey until fully cooked.  Drain any excess fat and grease. 
*Return hamburger/turkey to skillet.  Add canned tomatoes, spaghetti sauce, 1/2 the onion, and spices.  Simmer for 20 minutes

***Let meat cool a bit so it won’t burn your hands when you start filling the noodles***
*When meat and noodles are cool enough to work with, take one noodle at a time, and start scooping the meat mixture into the noodle with a small spoon.  (you can fill these as full as you’d like. No limit here. Go crazy! 😀 )

*After noodles are full of meat mixture, place them into a sprayed 9×13 baking dish.  Try and get as many as you can into the dish. They are so yummy, trust me. You’ll want your dish stuffed..

*When baking dish is full with your noodles, pour any remaining meat mixture over top
*If you’re choosing to have cheese..now’s the time to add that, too.
*Bake for about 20 minutes (or until cheese is nice and bubbly) in  pre-heated 350* oven
*Serve with remaining onions, cilantro, cheese, sour cream, sliced olives (seriously, this list could go on and on..)
